崗位職責/職位描述
- 后廚運營管理 協助廚師長管理日常廚房運作;監督食品制備全過程的質量;監測收貨的食品質量和數量。
- 菜品質量與研發 熟練掌握粵菜烹飪技巧,深入了解食材特性;協助制定菜單及食品節;積極開創新菜,研究當地餐飲市場。
- 團隊管理與培訓 協助對廚房各崗位人員培訓;檢查、考評各崗位的工作;幫助下屬提高技能并為他們的職業發展提供支持。
- 成本與安全管理 控制食品出產的標準,控制廚師按照配料卡標準及程序準備食品;懂得成本核算,食物原料及食品營養知識;對酒店食品衛生、安全及食品質量負責。
- Back-of-house operation management: Assist the chef supervisor in managing the daily kitchen operations; supervise the quality of the entire food preparation process; monitor the quality and quantity of the received food.
- Dish quality and development: Proficiently master Cantonese cooking techniques, deeply understand the characteristics of ingredients; assist in formulating menus and food festivals; actively develop new dishes and study the local catering market.
- Team management and training: Assist in training staff in various kitchen positions; inspect and evaluate the work of each position; help subordinates improve their skills and provide support for their career development.
- Cost and safety management: Control the standards of food production, ensure chefs prepare food according to the standard and procedures of the recipe cards; understand cost accounting, knowledge of food raw materials and food nutrition; be responsible for hotel food hygiene, safety and food quality.
