作為酒店廚師長,需承擔以下主要工作職責:
1、Take full charge of daily kitchen operations, formulate standard recipes, production processes and quality specifications to ensure consistent taste and quality of dishes.
? 全面負責廚房日常運營管理,制定菜品標準食譜、出品流程及質量規范,確保菜品口味穩定與品質一致性。
2、Lead menu development and updates, optimize dish structure based on seasonal ingredients, guest feedback and market trends, and strictly control food cost rates.
? 主導菜單研發與更新,結合季節時令、賓客反饋及市場趨勢優化菜品結構,控制食材成本率。
3、Oversee kitchen team management, including recruitment, skill training, scheduling and performance evaluation, to enhance the team's professionalism and collaboration efficiency.
? 統籌廚房團隊管理,包括招聘、技能培訓、排班調度及績效考核,提升團隊專業能力與協作效率。
4、Strictly control the entire process of food procurement, inspection, storage and processing to ensure fresh and safe ingredients, reduce waste, and achieve precise cost control.
? 嚴格把控食材采購、驗收、存儲及加工環節,確保食材新鮮安全,減少浪費,節約成本。
5、Supervise kitchen hygiene and safety management, including kitchenware disinfection, workspace cleaning and fire safety, in compliance with industry hygiene standards.
? 監督廚房衛生與安全管理,包括廚具消毒、工作區域清潔及消防安全,符合行業衛生標準。
6、Coordinate communication between F&B service and the kitchen, optimize dish serving rhythm, ensure smooth operations during peak hours, and enhance guests' dining experience.
? 協調餐飲服務與廚房的溝通,優化出菜節奏,保障高峰期運營順暢,提升賓客用餐體驗。
We are looking someone who:
我們尋找的人選需具備:
1、Over 5 years of kitchen experience in star-rated hotels, including at least 2 years in a comparable management role, with proficiency in both Chinese and Western culinary systems.
? 5年以上星級酒店廚房工作經驗,其中至少2年同崗位管理經驗,熟悉中式 / 西式烹飪體系。
2、Solid culinary expertise and strong ability in dish innovation, with a track record of successful menu development.
? 具備扎實的廚藝功底與菜品創新能力,有成功的菜單研發案例。
3、Proficient in catering cost control methods, and well-acquainted with the characteristics and market prices of various ingredients.
? 精通餐飲成本控制方法,熟悉各類食材的特性及市場價格。
4、Excellent team leadership and organizational coordination skills, with the ability to effectively motivate teams to achieve objectives.
? 具備出色的團隊領導與組織協調能力,能有效激勵團隊達成目標。
5、Familiar with food safety regulations and kitchen hygiene standards.
? 熟悉食品安全法規及廚房衛生標準。
6、Good English proficiency, capable of conducting basic communication with international teams and guests.
? 英語良好,可與國際團隊及賓客進行基礎溝通。?
