崗位職責/職位描述

1.日常運營準備Daily Operation & Preparation
負責中餐廳、西餐廳、大堂吧、行政酒廊、云尚廚房、會議茶歇及宴會等所有營業點的餅房出品準備工作,包括日常零點訂單、自助餐甜品臺、特色糕點及定制蛋糕的制作。參與酒店關于餅房政策、理念、方向、目標及標準的決策制定,并嚴格執行相關指示。
Responsible for daily pastry preparation across all F&B outlets including Chinese Restaurant, Western Restaurant, Lobby Lounge, Executive Lounge, Zenith Kitchen, meeting coffee breaks and banquet events. Prepare à la carte orders, buffet dessert stations, signature pastries and customized cakes. Participate in decision-making regarding pastry policies, concepts, directions, objectives and standards, and execute instructions accordingly.
2. 質量與標準維護 Quality & Standard Maintenance
按照餅房主廚及行政總廚的要求,維持日常烘焙及甜品制作業務,確保所有出品符合酒店質量與安全標準。通過創新設計和精湛工藝提升餅房產品的獨特性與市場競爭力,合理利用原材料與人力資源,實現成本效益最大化并維護酒店高端品牌形象。
Maintain daily baking and pastry production operations as directed by Pastry Sous Chef and Executive Chef to ensure all products meet hotel quality and safety standards. Enhance uniqueness and market competitiveness through innovative design and exquisite craftsmanship. Optimize use of ingredients and manpower to maximize profitability while maintaining the hotel's premium brand image.
3. 團隊協作與效率Teamwork & Efficiency
優化餅房工作流程,提高生產效率,培養團隊合作精神,服從餅房管理層的工作安排與調度,確保出品及時性與一致性。
Optimize pastry kitchen workflows to improve production efficiency, foster teamwork spirit, and follow work arrangements and scheduling from pastry management to ensure timeliness and consistency of all products.
4. 賓客滿意度 Guest Satisfaction
確保所有餅房日常運營事務按時完成,甜品出品滿足并超越賓客期望,及時處理特殊飲食需求及VIP賓客的定制要求。
Ensure all daily pastry operations are completed on schedule, with dessert offerings meeting and exceeding guest expectations. Promptly handle special dietary requirements and customized requests for VIP guests.
5. 政策執行與持續改進Policy Implementation & Continuous Improvement
確保餅房各項政策與操作程序的持續改進與有效執行,監督團隊成員嚴格遵守已批準的食品安全、衛生及操作標準。
Ensure continuous improvement and effective implementation of pastry kitchen policies and procedures. Supervise team members to strictly comply with approved food safety, hygiene and operational standards.
6. 衛生與安全標準Hygiene & Safety Standards
維持餅房區域達到酒店清潔衛生標準,嚴格執行酒店食品安全管理體系。在必要時采取糾正措施,確保工作環境符合衛生法規要求,負責餅房設備的日常維護與保養。
Maintain pastry kitchen areas to meet hotel cleanliness and hygiene standards, strictly implementing food safety management systems. Take corrective actions when necessary to ensure the work environment complies with hygiene regulations. Responsible for daily maintenance and care of pastry equipment.
