Main Responsibilities 主要職責
1. Beverage Service & Control 酒水服務與管控
? Provide drink & related product service to guests strictly in accordance with hotel Beverage Policy, and comply with F&B Control & ordering procedures.
依據酒店酒水政策為賓客提供酒水及相關產品服務,嚴格執行餐飲成本控制與點單流程。
? Oversee daily beverage consumption, control beverage cost, inventory and wastage effectively.
負責酒水日常消耗管控,有效控制酒水成本、庫存及損耗。
2. Restaurant Operation Supervision 餐廳運營監督
? Supervise daily restaurant operation and ensure full compliance with established hotel policies & procedures.
監督餐廳日常運營,確保嚴格遵守酒店既定政策與流程。
? Focus on service procedure, product quality and staff grooming to meet operational & hotel standards.
重點把控服務流程、產品質量及員工儀容儀表,符合運營及酒店標準。
3. Team Training & Management 團隊培訓與管理
? Conduct training programs including 15 Minutes Training, English Training, Service Excellence Training, Up-selling training, daily Taste Panels & Menu Classes to ensure well-trained team.
組織開展15分鐘培訓、英語培訓、卓越服務培訓、向上銷售培訓、每日菜品品鑒及菜單知識培訓,確保團隊專業達標。
? Conduct daily briefing/rehearsal before shift and communicate all updated hotel/restaurant information to staff.
執行班前例會,向員工傳達酒店及餐廳所有最新信息
? Ensure all staff attend English Training and meet required language level for position.
確保員工參加英語培訓并達到崗位語言要求。
? Maintain department personnel records and submit to HR timely.
維護部門人員記錄并及時提交至人力資源部。
4. Pre-service & On-site Management 餐前準備與現場管理
? Ensure full and correct mise-en-place ready for each service period.
確保各開餐時段餐前準備充分且規范。
? Supervise buffet set-up to ensure correct, fresh and appealing as per operation policy and Executive Chef’s requirement; ensure buffet name tags are accurate and error-free.
監督自助餐擺臺,確保符合運營標準及行政總廚要求,菜品新鮮美觀;確保自助餐菜牌準確無誤。
? Ensure hostess perform duties properly, reception area neat and reservation book well maintained.
確保迎賓員履職到位,前臺區域整潔,預訂記錄妥善維護。
? Ensure all captains are on station and perform duties as required.
確保所有領班在崗并按要求履職。
5. Guest Service & Relationship 賓客服務與關系維護
? Maintain close guest contact to ensure satisfaction and recognize regular guests.
保持與賓客密切溝通,確保滿意度并識別常客。
? Oversee F&B presentation to meet hotel standards; be fully knowledgeable of menu to explain and answer guest inquiries.
監督餐飲出品呈現符合酒店標準;熟練掌握菜單內容,為賓客介紹并解答疑問。
