工作職責 / Job Responsibilities?- 食材預處理:根據菜單和廚師要求,完成食材的清洗、削皮、切配(如切絲、切片、切丁)及初步加工(如焯水、過油),確保食材符合烹飪標準。Prepare ingredients: Wash, peel, cut (e.g., into strips, slices, dices), and pre-process (e.g., blanch, fry briefly) ingredients according to menus and chefs’ instructions, ensuring they meet cooking standards.
- 調味與備料:提前調配醬汁、準備復合調味料(如糖醋汁、辣醬),按餐品需求分裝小份備用;協助整理香料、干貨等輔助材料。Prepare seasonings: Mix sauces, prepare compound condiments (e.g., sweet-and-sour sauce, chili paste), and portion them into small servings in advance; assist in organizing spices, dried ingredients, and other auxiliary materials.
- 烹飪協助:配合主廚完成烹飪流程,傳遞鍋具、調料、工具(如漏勺、鏟子);協助控制火候(如調整爐灶火力),觀察菜品狀態并及時反饋。Assist in cooking: Collaborate with head chefs during food preparation, passing cookware, seasonings, and tools (e.g., strainers, spatulas); help adjust heat levels (e.g., regulating stove火力) and monitor dish progress, providing timely updates.
- 擺盤裝飾:按菜品設計要求,完成基礎擺盤(如鋪底、定位主食材),協助添加裝飾(如香草、水果片、醬汁畫),確保出品美觀符合餐廳標準。Plate and garnish: Follow dish design requirements to complete basic plating (e.g., base laying, positioning main ingredients), assist with decorative elements (e.g., herbs, fruit slices, sauce art), ensuring presentation meets restaurant standards.
- 清潔與維護:實時清理操作區域(如砧板、臺面、灶臺),清洗使用過的廚具(如鍋、碗、刀具)并歸位;定期維護廚房設備(如抽油煙機、冰箱),保持環境衛生。Clean and maintain: Continuously tidy the workspace (e.g., cutting boards, countertops, stoves), wash used cookware (e.g., pots, bowls, knives) and return them to their places; regularly service kitchen equipment (e.g., range hoods, refrigerators) to maintain hygiene.
- 團隊協作:配合傳菜員、收銀員等其他崗位,高效完成出餐任務;響應臨時需求(如加急菜品、特殊客制化要求),靈活調整工作優先級。Team collaboration: Coordinate with food runners, cashiers, and other staff to ensure efficient meal delivery; respond to urgent requests (e.g., rush orders, customized dishes) and adjust priorities flexibly.
