崗位職責/職位描述
? To ensure consistency in quality of service provided in all restaurants and bars meet the minimum standards of the hotel
確保各個餐廳和酒吧提供的服務始終符合飯店的標準。
? Walks all F&B front and back of the house areas on daily basis
每日視察餐飲部的前、后臺。
? Notes any shortcomings in hardware and software and take appropriate actions
及時發現餐飲部在軟、硬件方面所存在的問題,并采取正確的措施。
? Reviews service guidelines every 6 months, and implement accordingly to maximise guest satisfaction
每隔6月重新檢查一遍服務指導原則,實施這些指導原則。
? Daily communication with the Executive Chef to ensure food prepared are of the agreed standards and consistent all the time
與行政總廚進行日常交流,確保所準備的食物始終如一地符合我們所認可的標準。
? To ensure consistency of quality, taste, presentation, temperature of beverage served in all restaurants and bars (according to group’s standard)
確保所有的餐廳和酒吧所提供的飲料的質量、味道、外觀、溫度等始終如一地保持標準(根據集團的標準)。
? Ensures maximum creativity in all wines, cocktails and mocktails presentation
確保所有的葡萄酒、雞尾酒的外觀發揮創造性。
? Ensures that the Hotel FSMS Program is strictly implemented, including the ?cleanliness of all restaurants and bars, personal hygiene standards for all food handlers and monthly Hygiene Audits
確保嚴格實施酒店食品安全管理系統計劃、包括所有餐廳和酒吧的清潔、與食品服務有關的人員的個人衛生和每月衛生審計。
? To review overnight reports
檢查夜班工作報告。
? To share information from divisions with F&B team to create day to day operation awareness
向餐飲部的所有員工通報餐飲部門的相關信息,使員工每天了解運營情況。
? To conduct monthly F&B meetings and review the following:
- Update status on maintenance by?

? Summarises all relevant data from current and previous years

? Prepares a three month forecast on covers and average check to submit to the GM / Hotel Manager / Resident Manager on the first of each month
每個季度的首月為總經理/飯店經理/駐店經理提交該季度的住店人數和平均消費水平
? Monitors preparation of Annual Plan encompassing all F&B areas indicating priorities
監督年度計劃的準備情況,年度計劃應包括餐飲部所有區域,并注明相關的優先事項。
? Maintains proper and adequate controls are in place specifically over purchase orders and requisitions
保持充分而有效控制,尤其是對采購訂單和申請單的控制。
? Monitors monthly food and beverage inventory turnover
監督每月餐飲庫存的流失率。
? To ensure that purchasing, receiving and all storage are efficiently handled and that the goods purchased conform to the company’s specification
確保采購、收獲和庫房存儲等工作的高效率,所購貨物符合公司的要求。
? Review food and beverage cost analysis on a daily basis to maintain in line with budgeted and forecasted figures
每日對餐飲成本進行分析,使其維持在預算和預測之內。
? Review and analyze monthly Profit and Loss statement with Financial Controller and GM / Hotel Manager / Resident Manager
每月與總經理/飯店經理/駐店經理共同檢查和分析利潤和虧損情況。
? Recommends / institutes measures for control for any deviation of plus or minus 5%
建議/ 制定任何控制加分或減分行為的衡量措施。
? Plan future business strategy and review ongoing action plan progress
計劃將來的經營戰略,檢查正在進行的行動計劃的程序。
