職位描述
1. Monitoring the ordering, purchasing, receiving, storing and issuing functions.
監控定購、采購、收貨、儲存和分發事務。
2. Checking food, beverage and general receiving reports, issues and transfer.
檢查食物、飲料和一般物品的收貨報告、分發和轉送。
3. Prepare Daily Food and Beverage Flash Cost Reports.
準備每日食物和飲料成本快報。
4. To prepare and analyze monthly Food & Beverage potentials.
準備和分析每月餐飲部的潛力。
5. Conduct random stock take to determine beverage levels versus PAR levels for all outlets.
隨機清點存貨,決定各餐廳飲料的潛力。
6. Stock take of Production Inventories on an annual basis or as required.
每年或在需要時對生產存貨進行盤點。
7. To take charge of the month end inventory counts and to produce the month end Food & Beverage control report.
負責月末存貨清點并制作月末餐飲控制報告。
8. In charge of the all assets control (FF&E, SOE, Inventory, etc.,)
負責對酒店所有資產(固定資產、營運物資、存貨等)的宏觀控制與管理。
9. Conduct spot check on portion and wastages. Conducts yield tests and buffet costing.
不定期檢查出品的分量及有無浪費現象。進行出成率測試,和計算自助餐測試
10. To check for waste, pilferage, proper utilization of food and beverage in production (kitchen) and bars and ensure the recipes are followed.
檢查有無浪費、失竊、廚房在制作過程是否恰當使用餐飲材料,檢查酒吧,確保配料單得以實施。
11. Assist with Recipe costing and updating for Food and Beverage.
協助餐飲部更新菜譜和核算菜譜成本。
12. Participate in the market survey of fresh food items, and make the market survey report.
參加市場調查,并制作市場調查報告。
13. Review system prices to ensure accuracy.
核查輸入系統的價格,確保準確。
14. Daily check the beverage consumption , verify the selling quantities with system.
每天檢查酒吧的酒水消耗,與系統核對銷售數量。
15. Prepare cost of special events for banqueting i.e. Special Promotions, Christmas functions etc., and Moon Cake selling.
核算宴會特殊活動如特別促銷、圣誕節,月餅銷售等成本。
16. To carry out any other duties and responsibilities as assigned.
執行分派的其他工作。
