崗位職責(zé)/職位描述
西廚熱房/冷房主管
1.Must have a sound knowledge of Western and Asian food preparation and presentation.
必須具有豐富的中、西式食品知識(shí)。
2.Techniques suitable for Coffee Shop and Western Restaurant and Western banqueting Activities.
具有與咖啡廳、西餐廳、宴會(huì)廚房相關(guān)的技能。
3.To supervise and ensure smooth and efficient operation of the Kitchen Department.
保持廚房的日常操作正常。
4.Establishes standards of food quality and preparation and ensures they are strictly adhered to.???????????????????????
確保食品質(zhì)與量的高水平供應(yīng)。
5.Supervises the issuance / receiving of requisitions, kitchen transfers, food costs, etc.?????
監(jiān)督廚房的進(jìn)貨、出貨、轉(zhuǎn)移單據(jù),及食品成本等等。
6.Develops new menus for promotions and restaurants to ensure continuous progression
創(chuàng)新出品,增加營(yíng)業(yè)收入??????????????????????????????
7.Supervises preparation of daily market and grocery list, issues maintenance and follow-up.
監(jiān)督每天的市場(chǎng)采購(gòu)單和食品清單,發(fā)出及跟進(jìn)。??????????????????????????????????????????????????????
8.Inspects all storerooms, refrigerators, freezers and receiving areas daily.
每天檢查所有的冰箱、庫(kù)房、及存放食品的地方。
崗位要求
1. More than 1 year working experience in the same position is preferred.
1年以上同崗位工作經(jīng)驗(yàn)者優(yōu)先考慮。
2. familiar with the hotel's customer service requirements.
熟悉掌握酒店對(duì)客服務(wù)的要求。
