崗位職責/職位描述
【崗位職責】
1、全面負責中餐廳廚房的日常運營及管理工作,確保菜品質(zhì)量、出品標準及食品安全符合朗廷國際酒店的高標準要求。
2、制定并執(zhí)行中餐菜單,結(jié)合市場需求和季節(jié)變化,定期更新菜品,提升餐廳競爭力。
3、監(jiān)督廚房工作流程,優(yōu)化操作規(guī)范,提高工作效率,控制食材成本及人力成本。
4、負責廚房團隊的培訓(xùn)與管理,提升員工專業(yè)技能及服務(wù)意識,打造高效協(xié)作的團隊。
5、嚴格把控食材采購、儲存及加工環(huán)節(jié),確保食材新鮮、衛(wèi)生,符合食品安全標準。
6、與其他部門(如餐飲樓面、采購等)保持良好溝通,協(xié)調(diào)解決運營中的問題,確保顧客用餐體驗。
7、定期檢查廚房設(shè)備,確保其正常運行,及時提出維修或更換建議。
【崗位要求】
1、具備豐富的中餐烹飪經(jīng)驗,精通粵菜、川菜或其他中式菜系,能夠獨立設(shè)計創(chuàng)新菜品。
2、熟悉廚房管理流程,具備優(yōu)秀的團隊領(lǐng)導(dǎo)能力,能夠有效調(diào)動員工積極性。
3、對食材品質(zhì)有敏銳的判斷力,熟悉成本控制及預(yù)算管理。
4、具備較強的抗壓能力,能夠在高強度工作環(huán)境下保持高效與冷靜。
5、注重細節(jié),對食品安全及衛(wèi)生標準有嚴格要求,確保廚房符合當?shù)匦l(wèi)生法規(guī)。
6、良好的溝通與協(xié)調(diào)能力,能夠與其他部門緊密合作,提升整體運營效率。
7、有國際酒店或高端餐飲機構(gòu)工作經(jīng)驗者優(yōu)先。

Job Requirement:
- Work experience in similar capacity with international chain hotels
- Diploma are required. Degree in Culinary management is preferable
- Strong knowledge and application of HACCP standards.
- A collaborative team player with a positive mindset and professional attitude.
- Ensure recipes and costings are established and updated
- Control and monitor optimum food costs to yield maximum amount of outlet profit and maximum guest satisfaction
- Manages day-to-day operations, ensuring the standards quality are meet the expectations of the guests and company on a daily basis
