崗位職責：
1、擁有相關食品知識及制定標準。具有廣泛的產(chǎn)品知識，包括各種原料/設備/供 應商/市場和流行趨勢，以便對廚房的操作作出相應的調整。提供高標準的服務。 了解并熟知所有食品準備的標準和程序。保證所有的政策和程序以及標準與程序是 一致的。制定和發(fā)展標準和程序。保證高效率且有利潤的廚房運作。
?2、負責監(jiān)督所有廚房食品質量的準備、要不斷的檢查食品的味道、溫度外觀。確 保所有的食品沒有腐爛、變質時刻注意在提供食品時避免員工使用過期及骯臟食品。?
3、發(fā)展新菜肴和產(chǎn)品。設計菜單和成本控制。發(fā)展并寫下標準菜譜確保優(yōu)秀的烹 飪技術不外傳。?
4、控制食品出產(chǎn)的標準。監(jiān)測收貨的食品質量和數(shù)量。控制廚師要按照配料卡標 準及程序準備食品。?
5、管理所有廚房的操作，監(jiān)督所有廚房的操作，組織應付特殊事件。?
6、管理采購 / 存貨控制，與采購配合，發(fā)展和監(jiān)督采購程序的完成。建立采購明 細單，評估貨物和服務的標價，商議價格和采購條款。準備采購預算，建立經(jīng)濟的 定購數(shù)量。建立存貨控制程序。采購按照采購程序和規(guī)范購買原料和存貨。儲存控 制，按照儲存控制程序處理和儲存貨物。?
7、在部門/單元/服務點內(nèi)進行協(xié)調建立部門/單元/服務點的實際工作水平。評估 與其他部門/單元的工作表現(xiàn)。與其他部門/單元間的運作協(xié)調。監(jiān)督單元工作效率。?
8、管理職業(yè)關系，避免和調節(jié)抱怨，與員工溝通避免與工作相關的矛盾。解決爭 端，約束員工遵守紀律。?
9、員工管理，明確和制定本部門各崗位所需人員的編制計劃，招聘員工。準備員 工花名冊，維護最新的員工記錄。進行員工表現(xiàn)評估實施員工離職面談。?
10、給予所管轄的員工不斷的建議和支持。鼓勵員工掌握多技能，實施合適的管理 方式給予員工動力和溝通，必要時對員工進行面對面指導，協(xié)助計劃和實操教育。
崗位要求：
1、中專以上學歷。?
2、專業(yè)烹飪學校畢業(yè)優(yōu)先。?
3、至少有 5 年以上五星酒店廚房管理工作經(jīng)驗并有 3 年廚師長經(jīng) 歷。?
4、必須熟知西餐食品及基本的亞 洲菜系 。
5、熟練及出色的技能 。
6、必須有足夠的能力創(chuàng)建新的菜 肴并對食品的出品及展示作出適 當?shù)臉藴?。
7、是一個好的訓導師。
8、熟練使用辦公軟件。
