1.據有常規的烹飪技能和知識。
Have general knowledge of food technique.
2.確保所有的準備工作已經在開餐之前準備到位。
Ensure mise-en-place is completed prior to service.
3.積極主動的監督廚房凍庫衛生以確保廚房營運的衛生和安全。
Supervise and take active part in cleaning kitchen chillers to ensure that is clean and safe for operation.
4.在準備食物時需監控食品質量。根據烹飪配方或個人判斷稱重、測量和混合食材。通過采用嘗、聞或用餐具刺透等方法檢測食物是否被充分烹飪。
Monitor food quality while preparing food. Weight, measure, and mix ingredients according to recipes or personal judgment. Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
5.確保食物按量、按式,與配菜一同呈現。為客人提供的菜品必須按合理的分量及完美的出品準備。在忙碌的時候提前預期及溝通交流任何會需要到的幫助。
Ensure proper portion, arrangement, and food garnish are served. Serve food in proper portions and presentation. Anticipate and communicate any assistance needed during busy periods.
6.了解食品和人力成本,在把控食物出品程度的同時最大化減少浪費并控制食品成本以達到預期標準,判斷出物品資源可能耗盡缺失的情況。如有剩余食材可運用到當天特色出品或其它地方,需及時告知上級廚師。
Be aware of food and labour costs and monitor food levels to minimize waste and maintain controls to meet forecasted food costs and identify instances of shortages when items may run out. Inform the Chef of any excess food items that can be used in daily specials or elsewhere.
7.確保高標準的個人形象和儀容儀表。
Ensure high standards of personal presentation and grooming.
8.需要時參加培訓課程和會議。
Attend training sessions and meetings as and when required.
9.執行分派的任何合理任務和額外職責。
Carry out any other reasonable duties and responsibilities as assigned.


任職要求 Qualifications
1.烹飪專業文憑者優先。
Savoury cooking certification preferred but not required.
2.要求在廚房烹飪領域有團隊領導經驗,如在烹飪學科有學位證書更佳。
Previous leadership experience in the culinary field required or Diploma Certification in a Culinary discipline an asset.
