MAJOR RESPONSIBILIES 責任概要 :
To provide consistent quality of food and services to internal and external customers, by adhering to and enforcing all Marriott Standards and Policies; training and guidance of trainees and attendants.

SPECIFIC DUTIES 工作任務 :
1.?Supervises Western Kitchen?preparation shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
監督西廚房生產運營,確保執行所有關于餐飲的政策,標準及程序。
2.?Assists Western Kitchen?Chef De Cuisine and Executive Chef with kitchen operations as necessary.協助西廚房廚師長及行政總廚維持廚房的運營。
3.?Supervise and coordinate activities of cooks.
監督和協調廚師的工作。
4.?Determine how food should be presented and create decorative food displays.
確定食物應該如何呈現,并創建裝飾性的食品展示。
5.?Ensure proper portion, arrangement, and food garnish to be served.
確保提供適當的分量、擺放和食物裝飾。
6.?Monitor the quantity of food that is prepared.
監控準備的食物數量。
7.?Inform Food & Beverage service staff of menu specials and out of stock menu items.
通知餐飲服務人員菜單特價和缺貨的菜單項目。
8.?Prepare special meals or substitute items.
準備特殊餐點或替代品。
9.?Assist cooks and kitchen staff with various tasks.
協助廚師和廚房工作人員完成各種任務。
10.?Provide cooks with needed items.

11.?Monitor stock of kitchen supplies and food.

12.?Maintain kitchen logs for food safety program and food products.

13.?Ensure the quality of the food items and notify manager if a product does not meet specifications.

14.?Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees.

15.?Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications.

16.?Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.
