崗位職責
1、建立并管理一個高效的廚房團隊、監督所有中西廚房的出品。
2、協助行政總廚一起制定員工工作日程安排。
3、協助行政總廚和各廚房廚師長一起預計、制定和監控每日市場采購單。關注食品成本控制。
4、在行政總廚的領導下開展新菜肴的試菜和開發工作。
5、協助行政總廚召開所管轄部門的每日例會。
6、充分理解并嚴格遵守酒店的規章制度，例如消防，衛生檢疫以及健康安全等。
7、監督所有供應食品的質量與數量。
8、監督各廚房收到的食品的質量與數量。
9、將相關信息傳達給行政總廚。
10、經常檢查廚房設備，做好維護工作。
11、保證每日售貨柜臺上，自助餐上以及宴會上的食品陳列引人入勝。
12、確保所有直接面對客人的員工對于食品以及其制作工藝有充分的認識。
13、與本各部門建立良好的聯系。
14、確保員工執行正確的衛生程序，檢查和控制所有相關政策，協助廚房衛生醫生 監控國家規定的執行情況。
15、參與菜單計劃，推薦新菜，并聯系組織所有相關廚房和餐廳執行新菜的推出。
16、負責做好所有促銷和活動的紀錄，書寫和計算菜譜包括菜肴的照片.

2、定期檢查所有員工外表的清潔，讓他們以自己整潔的外表和制服為榮。
