崗位職責 | Job Responsibilities
菜品制作:嚴格按照宴會菜單和標準流程,高質量完成熱菜、冷菜等烹調任務,保證出品的口味、色澤與裝盤標準。
Food Preparation: Strictly follow banquet menus and standard recipes to complete the cooking of hot and cold dishes with high quality, ensuring the taste, color, and plating meet the standards.
備料管理:負責開單領料,檢查每日宴會所需食材的數量與質量,做好餐前準備和餐后儲存。
Mise en Place: Responsible for ordering and collecting ingredients, checking the quantity and quality of daily banquet supplies, and completing pre-meal preparations and post-meal storage.
衛生安全:嚴格遵守食品衛生法規,負責工作區域的清潔衛生,確保廚具、設備及個人衛生達標。
Hygiene & Safety: Strictly comply with food safety regulations, maintain cleanliness in the work area, and ensure that utensils, equipment, and personal hygiene meet the required standards.
成本控制:合理使用食材,減少浪費,協助控制宴會菜肴的成本。
Cost Control: Utilize ingredients reasonably to minimize waste and assist in controlling the costs of banquet dishes.
團隊協作:配合廚房其他崗位,確保宴會出菜順暢、準時;指導初級廚師或實習生。
Teamwork: Coordinate with other kitchen sections to ensure smooth and timely service for banquets; provide guidance to junior cooks or trainees.
設備維護:正確使用并日常維護廚房設備,發現問題及時報修。
Equipment Maintenance: Properly use and perform daily maintenance on kitchen equipment, and report any malfunctions promptly.
任職要求 | Requirements
具備2年以上宴會廚房工作經驗。
Minimum 2 years of experience in a banquet kitchen.
熟悉各類宴會菜品制作。
Familiar with the preparation of various banquet dishes.
有團隊合作精神,執行力強。
Strong team spirit and high execution ability.
